Recipe of the week:
Banana Pancakes
INGREDIENTS:
– 2 bananas, mashed
– 100ml milk
– half tsp baking powder
– 2 eggs, beaten
– 110g flour
– pinch of salt
– clarified butter/ghee for frying
– banana slices, cinnamon powder & honey/maple syrup for garnishing
METHOD:
1. Combine the eggs, bananas, cinnamon, salt, baking powder & milk together into a bowl & beat together.
2. Gradually add the flour and continue beating until it forms a batter.
3. Heat some clarified butter/ghee in a non-stick frying pan over medium heat, then drop 2 table spoonfuls of batter around the pan.
4. Allow to cook for 2-3 minutes or until done, then flip over & cook on the other side until done.
5. Serve warm. Garnsh with banana slices, cinnamon powder & honey or maple syrup, and ENJOY!
