Crunchy Nut & Seed Rounds/ Clusters
A simple, tastey & healthy snack option that I often enjoy & add also as a lunchbox treat
Makes 16 round discs or 16 clusters
Use any nuts: pecans/walnuts/pistachios/peanuts/cashews/ macadamia nuts but cut into slivers or chop
Ingredients:
– 100g almonds, slivered or any nut of your choice or mixed nuts, chopped
– 80g pumpkin seeds, optional
– 70g sesame seeds
– 4 tblsp chia seeds
– 2 pinches of salt
– 6 tbslp maple syrup or to taste
Method:
1. Preheat oven to 180 degrees Celsius.
2. Add the slivered/chopped nuts, seeds & salt together into a bowl & mix well.
3. Now add the maple syrup and mix altogether.
4. Line a baking tray with wax wrap & grease with cooking spray.
5. Use a round cookie cutter and place 1 tbslp or more of the mixture inside, then flatten to form a round disc. Repeat until all the mixture is used. You can use any shaped cookie cutters OR drop 1 tbslp on the lined baking tray as clusters.
6. Bake for 15-20 minutes or until golden brown.
7. Remove from the oven, then leave to cool completely before serving.
8. Store in an airtight container & enjoy!
