Palestinian Fattoush Salad

Palestinian Fattoush Salad

INGREDIENTS:
-1 cup sliced cherry tomatoes
-1 cup Cucumber, sliced and deseeded
-2 to 3 radishes, thinly sliced
-1 green pepper, cubed
-Handful of mint & spring onion
-1 head of romain/crunchita lettuce, shredded

METHOD:
1. Arrange lettuce leaves on a plate or platter.
2. Arrange all the other ingredients evenly on the lettuce.
3. Sprinkle Zaatar spiced pita cubes.
4. Then drizzle with the lemon sumac dressing and enjoy!

INGREDIENTS for Zaatar Spiced Pita Chips

-3 or 4 smalls pitas
-Extra virgin olive oil
-Zaatar Spice

METHOD:
1. Drizzle olive oil and a generous sprinkling of Zaatar on the pita cubes, then airfry til golden.

Lemon Sumac Dressing
-Juice and Zest of 2 lemons
-1 tsp sumac
-Olive oil as required
-Salt n pepper to taste
Mix thoroughly

Toss salad with dressing just before serving n top with toasted pita chips n a sprinkle of extra sumac
