Recipe of the week: Soji
Recipe Credit: Abdullah Manjra from Gora Manjra Caterers

Ingredients:
– half cup Tastyweet
– 3 tbslp ghee
– halp cup sugar
– half cup milk
– 1 tbslp blanched almonds
– 1 cup hot water
– 6 prunes or 8 sultanas or both
– quarter tsp cinnamon powder
– half tsp cardomom/elachi powder
– 1 tsp dessicated coconut
– 1 tbslp butter
Method:
1. Braise sultanas/prunes with the Tastyweet in the ghee until the Tastyweet changes to slightly golden brown in color & the sultanas/prunes swell
2. Add boiling water slowly to the pot until the Tastyweet is cooked.
3. Now add sugar & cook until it is absorbed into the soji.
4. Add the milk & butter into the mixture & cook over low heat for 15 min or until the soji is dry & fluffy.
5. Sprinkle coconut & almonds on the top before serving. Can also add a dollop of cooking cream & enjoy!
