Topic: My granny’s recipe
Recipe of the week: Stuffed Peppers. Also known as Akha Murcha
INGREDIENTS:
-500g mince, washed & drained
-1 large onion, grated
-1 large tomato, grated
-1 tblsp red ginger garlic masala or masala to taste
-1 tsp ground garlic
-half tsp ginger garlic
-salt to taste
-1 tsp turmeric powder
-3 tblsp of clarified butter/ghee
-handful of frozen green peas
-1 small carrot, diced
-2 large peppers cut in half, cleaned & seeds removed. I used 1 red pepper & 1 yellow pepper
-water as necessary
METHOD:
1.In a medium-sized pot, heat the clarified butter/ghee over medium heat.
2.Add the onions and saute.
3.Now add the diced carrots, peas, mince, and spices into the pot and cook until the mince is done while stirring to avoid the mince from getting lumpy.
4.Add the tomatoes, then lower the heat, and leave to cook until the moisture evaporates.
5.Remove the mince from the stove, then fill each of the pepper halves with a generous helping of the cooked mince.
6.Leave remaining mince in the pot, then add the stuffed peppers back into the pot.
7.Add half cup of water or more if necessary to the pot and steam over low heat until the peppers are cooked.
8.Serve hot with roti, atchaars and ENJOY!
