Recipe of the week: Ginger Snaps

INGREDIENTS
– 125g soft butter
– 1 cup brown sugar
– 1 large egg
– half a cup of golden syrup
– 1 level tblsp bicarbonate of soda
– 1 tblsp ginger powder
– 1 tsp cinnamon powder
– half tsp mixed spice
– 3 and a half cups self raising flour
– white sugar for coating

METHOD:
1.Preheat oven to 180 degrees Celsius
2.Cream the butter & sugar together.
3.Add the egg, golden syrup, bicarbonate of soda & remaining spices.
4.Beat all the ingredients together.
5.Now add the self raising flour, one cup at a time, and knead to make a soft dough.
6.Shape the dough into small balls, then flatten slightly and roll into white sugar.
7.Arrange on a greased oven tray and bake for 15 minutes until golden brown.
