Recipe of the week: Spicey Chicken Soup
INGREDIENTS:
-half kilogram chicken cut into small pieces or chicken fillets cut into cubes
-1 large onion, grated
-1 big cinnamon stick
-2 cloves
-2 elachi/cardomom pods
-3 peppercorns
-3 tblsp ghee/clarified butter
-2 tsp fresh ginger, grated
-1 tsp ground cumin/jeeru powder
-1 tsp ground dhana jeeru powder
-salt & black pepper to taste
-half to 1 tsp of ground green masala
Optional:
-Half cup of boiled macaroni
-1 large carrot cut into rounds
METHOD:
1.In a deep pot, add the ghee/clarified butter along with the cinnamon stick, cardomom pods, cloves & peppercorns over medium-high heat.
2.Add the onions, and once golden, add the chicken pieces and all the remaining spices.
3.Cook the chicken pieces over medium heat until done.
4.Add enough water to fill your pot. If using carrots and boiled macaroni, now is the time to add it into the pot.
5.Bring to a boil then season to taste. Sprinkle chopped coriander or spring onion before serving.
6.Serve hot as is or with a bread of your choice
