Grilled Prawns in A pot
INGREDIENTS
2 kgs Tiger Prawns ( with shell on)
1 Tbs feshly ground chillies( you can add more)
1 Tbs red chilli powder
6 freshly squeezed lemon juice
3 Tbs finely ground garlic
salt to taste
250 gms butter
¼ cup oil or olive oil
Dhania for garnish
METHOD
1.Devein prawns and wash thoroughly and leave drain out completely.
2.Marinate the prawns with the spices and( half the lemon juice) and leave ( 2 to 3 hrs or
overnight in fridge .
2.Heat a fairly large flat based pot .
Add the butter and olive oil/ normal oil
plz ensure that olive oil does not burn as butter and olive oil has a high burn threshold .
3.Add the marinated prawns to the pot
with ¼ cup water.
cook on high heat
( gas stove) for 15 to 20 min( no need to overcook prawns)
until all the water has evaporated and prawns is tender
and the butter and oil remains.
4.Garnish with dhania ( coriander)
5.Serve with chips and savoury rice and salad
SAUCE
Put all the following in a sauce pan and cook for 5 to 6min.
keep aside.
3 tsp freshly ground red chillies
2 tsp red chilli powder
½ of the lemon juice( remaining 3 lemons ) .
125 gms butter
¼ cup finely chopped fresh parsley
salt to taste
5 tbsp of all joy tomato sauce
( optional to add ¼ cup fresh cream)
take it off the heat and then add..
as it will curdle..
You can add the sauce to the prawns
but i prefer to pour it over when serving / or each person can pour it over their prawns individually.
