Recipe: Bol Renverse, also known as Upside Down Bowl or Magic bowl
Serves: 6

INGREDIENTS:
-500 chicken breasts cut into strips or cubed
-1 cup sliced mushrooms
-1 tblsp Soy sauce
-2 tsp ground garlic
-salt & black pepper to taste
-1 medium-sized purple onion, chopped
-1 red bell pepper, chopped
-1 large carrot, peeled & julienned
-1 cup spinach, chopped
-Extra Virgin olive oil for cooking
-1 tsp dried oregano
-1¹/² cups of cooked white rice
-¹/² bunch coriander, chopped
-6 fried eggs, seasoned with salt and black pepper
-2 tblsp Mrs Balls fruit chutney
Optional: handful of chopped cashews or pecans or almonds

METHOD:
1.Heat the olive oil in a non-stick frying pan over medium heat.
2.Season the chicken with salt & black pepper, then add it to the frying pan and cook on both sides until slightly brown. Remove from heat and leave aside.
3.In the same pan, add the veggies, garlic, oregano & more seasoning if required, then stirfry.
4.Now add the chicken, nuts if using, and fruit chutney into the pan and mix well. Remove from heat & leave aside.
5.To serve:
-Arrange 6 medium sized, but deep bowls in a row, then evenly distribute the chopped coriander & add to each bowl.
-Now place one fried egg, yolk side down inside each bowl.
-Spoon the chicken mixture evenly into each bowl over the fried egg.
-Finally, add the cooked rice evenly into each bowl, pressing it down firmly to compact.
-Place a large plate over the first bowl, then slowly flip over so the bowl is face down on top of the plate. Gently remove the bowl to reveal the delicious layers that make up this delicious dish!
-Repeat with the remaining 5 bowls, then Enjoy!
