Topic: Fish & chips
Recipe of the week: Crispy battered fish
INGREDIENTS:
-1 kg hake fillets or any white fish left whole/cut into half or cut into thirds to make fish nuggets.
-1 tsp salt
-Black pepper to taste
-half tsp lemon pepper
-1 cup white flour
-1 tblsp garlic powder
-1 tblsp paprika
-1 tblsp dried parsley
-1 large egg, beaten
-1 to 1¹/⁴ cups cold water
-half to 1 tsp yellow food colour (optional)
-oil for frying
-lemon wedges
METHOD;
1.Pat the fish dry with paper towels then season with salt, pepper & lemon pepper.
2.To make the batter, mix together the flour, garlic powder, parsley and paprika together in a dish.
3.Stir in the beaten egg and food coloring if using.
4.Add the water gradually into the flour mixture and stir to make a smooth batter.
5.Heat oil in a deep fryer.
6.Dip the fish fillets one at a time into the batter and coat evenly on both sides then fry in the hot oil for 3-4 minutes until cooked, crispy and golden.
7.Drain the fillets on a paper towel then serve hot with crispy or slap chips and lemon wedges.
