Recipe of the week:
Batata Vadda ( Potato Bajyas)
INGREDIENTS:
For the potato filling:
-4 medium-sized potatoes, peeled and cut into cubes
-1 medium sized onion, grated
-salt to taste
-2 tsp ground green masala
-¹/⁴ tsp turmeric powder
-1 tsp mustard seeds
-1 tsp jeera seeds
-handful coriander leaves chopped
For the batata vadda batter:
-1 cup channa flour
-¹/³ cup water or add as required
-¹/⁴ tsp turmeric powder
-¹/² tsp red chilli powder
-salt to taste
-pinch of baking soda
-oil for deep frying
METHOD:
1.Boil potatoes then drain and mash.
2.To the potatoes, add the onions, coriander, salt, turmeric powder and green masala and mix well.
3.In a pan add some oil and heat then add the mustard seeds and the jeera seeds.
4.When the mustard seeds splatter then remove from heat and pour into the potato mixture then mix well.
5.Roll the potato mixture into small balls of equal size.
6.Place the potato balls on a platter and leave in the fridge until firm.
7.In a dish add all the ingredients for the batter and water as necessary to make a batter.
8.Remove the potato balls from the fridge then dip into the batter until fully coated.
9.Deep fry the battered potato vaddas in hot oil until golden brown.
10.Serve hot with a chutney of your choice.
