Recipe of the week: Chicken Quesidillas
Serves 4
INGREDIENTS:
-3 chicken fillets, cut into small cubes
-2 tblsp extra virgin olive oil
-1 large onion, finely chopped
-1 large red bell pepper, diced
-1 tsp salt
-1 tsp black pepper
-1 tsp chicken spice
-2 tsp chilli powder
-¹/² tsp turmeric powder
-chilli sauce of your choice
-2 cups grated cheddar or gouda cheese
-4 medium sized tortillas
-butter for frying the tortillas
METHOD:
1.In a large non-stick frying pan add the extra virgin olive oil and heat then add the onions and cook until lightly golden.
2.Now add the red pepper, chicken cubes and all the spices and cook over medium heat until the chicken is done. Add water if necessary.
3.Add the chilli sauce of your choice to make the chicken saucy and mix well.
4.Leave the cooked meat aside then take a clean non stick frying pan and add some butter into it and heat over low to medium heat.
5.When the butter melts add one tortilla into the pan and quickly add cheese on the tortilla then spread half of the cooked saucy chicken over the cheese and cover with more cheese and finally add another tortilla over.
6.Turn the tortilla over to heat on the other side.
7.Repeat with the remaining chicken pieces, cheese & two tortillas.
8.Cut the quesidillas into 4 quarters. You will have 8 pieces to enjoy.
9.Serve with tomato & onion salsa, sour cream & guacomole or enjoy as is.
