Topic: Fried Rice
Recipe of Chinese Fried Rice
Serves 4-6
INGREDIENTS:
-3 tbslp butter, divided
-2 large eggs, beaten
-2 medium-sized carrots, peeled & either grated on the fine side or diced
-1small purple onion, chopped
-¹/² cup green peas either fresh or frozen
-3 or 4 cloves of fresh garlic, minced
-Salt & black pepper to taste
-4 cups of short grain white rice that is already boiled, drained & at room temperature
-3 stems of spring onions, sliced thinly
-3 or 4 tbslp of soy sauce
-half tsp or 1 tsp of roasted sesame oil
For the garnish:
– 1 large fried egg
– a few slices of cucumber
– a few slices of tomato wedges
– chopped spring onions
– chopped fresh coriander leaves
METHOD:
1.Heat half tbslp of butter in a medium-sized pot or wok, then add the beaten eggs & scramble until cooked. Remove from heat and leave the eggs aside.
2.In the same pot/wok, add one tbslp butter and heat until melted, then add the onions and saute.
3.Now add the carrots, peas, and garlic to the pot, then season to taste and cook until the carrots and peas are soft but not mushy.
4.Now add the remaining 1¹/² tbslp of butter into the pot and increase the temperature of the heat to high.
5.Add the cooked rice and soy sauce, then mix well. Cook for 3 minutes, stirring occasionally until the rice is lightly fried.
6.Now add the scrambled eggs & mix altogether.
7.Remove the pot/wok from the stove, then stir in the sesame oil until well combined into the rice mixture. Add more salt, black pepper & soy sauce if necessary.
8.Garnish & serve hot!
VARIATION:
-Add a cup of diced pineapples to the rice for a tropical taste.
-Add a cup of cooked shrimps to the rice.
-Add a cup of chopped spinach or purple cabbage or both.
