Recipe of the week:
Classic Bread & Butter Pudding
INGREDIENTS:
-4 slices of bread (white or whole wheat)
-2 tbsp butter, softened
-¹/² cup sugar
-2 large eggs
-1 cup milk
-1 tsp vanilla extract
-Pinch of salt
-Cinnamon, nutmeg & raisins to taste
-Icing sugar to sprinkle before serving
METHOD
1.Preheat oven to 180°C
2.Butter the bread slices and cut into squares or cut each slice in half(triangles)
3.In a bowl, whisk eggs, sugar, milk, vanilla extract, and salt.
4.Arrange the bread squares side by side in a greased baking dish.
5.Pour the egg mixture over the bread, pressing down gently.
6.Sprinkle cinnamon, nutmeg & raisins on top.
7.Bake for 25-30 minutes or until golden and set.
8.When cool, sprinkle with icing sugar then serve with custard or ice cream.
