Coconut milk rice

Recipe of the week:

COCONUT MILK RICE
Serves: 4

INGREDIENTS:
-2 cups Basmati or any other rice
-1 can (400ml) coconut milk
-1¹/² cups water
-1 tsp salt or salt to taste
-1 tsp sugar or sugar to taste

For Garnish:
-1 tblsp chopped coriander leaves
-2 tblsp fresh coconut flakes

METHOD:
1.Wash and drain rice then leave aside.
2.In a medium-sized pot add the water, coconut milk, salt and sugar and bring to a boil over high heat.
3.Add the washed rice and leave to boil for a few minutes.
4.Lower the heat, cover the pot and cook the rice for approximately 20 minutes.
5.Now remove the lid from the pot and cook the rice for a further 5 minutes until light and fluffy.
6.Garnish with coriander leaves and fresh coconut flakes.
7.Serve as a side dish with prawns, kingklip or sole fish.
