Creamy Prawn Pasta

Recipe of the week: Creamy Prawn Pasta

INGREDIENTS:
-500g prawns, shelled & deveined
-2 tsp red ginger/garlic masala
-1 tsp red chilli powder
-Salt, black pepper & lemon pepper to taste
-3 tblsp tomato puree
-3 tblsp freshly squeezed lemon juice
-3 tblsp mayonnaise or salad cream
-2 tblsp butter
-125ml Nestlé cream, beaten
-1 medium-sized red bell pepper, chopped
-1 medium-sized yellow bell pepper, chopped
-1 cup sliced mushrooms
-2 cups boiled pasta of your choice. I use fettuccine
-chopped spring onions or fresh parsley for garnish

METHOD:
1.Marinate the prawns in all the spices, cover, and refrigerate for an hour
2.Heat the butter in a medium-sized pot, then add the peppers, mushrooms & the prawns and cook until the prawns are pink on both sides.
3.Add the tomato puree & cook for a further two minutes, ensuring the prawn mixture is not dry.
4.Now add the beaten cream to the cooked prawns and mix well.
5.Leave to boil, then add the boiled pasta into the sauce.
6.Mix well then serve hot in individual bowls or in one large serving bowl.
7.Garnish with springs onions or fresh parsley.
