Date, carrot & pecan muffins
Makes 18 muffins
INGREDIENTS:
-half cup brown sugar
-half cup white sugar
-3 large eggs
-1 cup oil
-2 tsp cinnamon powder
-2 tsp bicarbonate of soda
-3 tsp baking powder
-1 cup grated carrots(1 big carrot or 2 small carrots)
-1 cup chopped pecan nuts
-half cup dates, chopped
-1¹/² cups flour
METHOD:
1.Preheat oven to 180°Celsius.
2.Combine the brown and white sugar together in a mixing bowl then add the oil and beat.
3.Now add the eggs and beat until creamy.
4.Add the cinnamon, baking powder and bicarb into the mixture and mix well.
5.Now add the remaining ingredients except the flour and beat together.
6.Gradually add the flour and mix to form a thick batter.
7.Arrange cookie cups in a muffin pan then add 1 tablespoon fulls of the cake batter into each cookie cup.
8.Bake for 20 minutes or until your cake tester comes out clean.
9.Enjoy!
Optional:
-Add 1 cup of mashed bananas for a different flavour (2 bananas)
