Recipe of the week: Easy pita
INGREDIENTS:
-4 cups flour
-1 tsp salt
-1 tsp sugar
-1pkt instant yeast
-¹/⁴ cup oil
-³/⁴ cup milk
-³/⁴ cup water
-1 large egg, beaten

METHOD:
1.In a large dish add the flour, sugar and salt then mix well.
2.Now add the yeast and oil and mix altogether.
3.Add the egg, milk and water gradually then kneed to form a soft dough.
4.Cover the dish with clingwrap and place in a warm area until the dough rises double in size.
5.Break the dough into medium sized balls or smaller balls for mini pitas and flatten into discs.
6.Arrange the discs on a tray, cover and leave to rise for 10-15 minutes.
7.In a large non-stick frying pan add some clarified butter/ghee and melt over medium heat then fry the pitas on both sides until they fluff up.
8.When the pitas are cool, slit one side and add filling of your choice and enjoy!

The pitas can be freezed.

Filling ideas:
1.Leftover steak or chicken cut into strips or cubed. Add sauce of your choice to the steak/chicken. Fill the pita with cucumbers cut into quarters, grated purple cabbage, chopped purple onion, gherkins, hummus, tzatziki and chicken/steak. I add grated cheese and drizzle with more sauce then heat in a pan until the cheese melts.
2.Use falafel as a delicious vegetarian filling.
