Recipe of the week:
GARLIC MASHED POTATOES

Serves 6

INGREDIENTS:
-1kg potatoes, peeled & cut into large, even pieces
-6 cloves of garlic, peeled & smashed
-2 tsp salt
-ground black pepper to taste
-²/³ cup milk
-¹/⁴ cup unsalted butter
-¹/⁴ cup sour cream
-chopped fresh chives or parsley for garnish

METHOD:
1.Place the potatoe pieces, smashed garlic cloves and salt into a pot then fill the pot with water until the potatoes are covered.
2.Place the pot onto the stove over high heat and bring to a boil. Then reduce the heat to medium-low and simmer for 20 minutes or until the potatoes are tender but not falling apart.
3.While the potatoes are boiling in a separate pot add the milk and butter and heat over medium heat until the butter melts and the milk mixture is warm, stirring occasionally. The milk must not boil.
4.Drain the water from the boiled potatoes & garlic and in the same pot pour the milk and butter mixture over the potatoes then mash using a potato masher.
5.Stir in the sour cream and add black pepper to taste. Add more salt to taste.
6.Serve hot topped with a dollop of butter and chopped fresh chives or parsley.
