Recipe of the week: Guacomole

INGREDIENTS
-2 ripe avocados, peeled, depitted
-1 small red/purple onion, chopped
-salt, black pepper to taste
-1 tblsp freshly squeezed lemon juice or lemon juice to taste
-finely chopped coriander/parsley for garnish

METHOD:
1.In a bowl, mash the avocados using a fork.
2.Add the chopped onions and seasoning.
3.Add lemon juice to taste.
4.Garnish with chopped coriander/parsley.
5.Serve with corn chips or nachos or as a dip or enjoy as a spread on toasted bread of your choice.

You can garnish with any of the following to add extra flavour & colour:
diced purple/red onions, lemon wedges, dicedĀ redĀ pepper
