Recipe of the week: Homemade Almond Roca
INGREDIENTS:
-2 cups brown sugar
-450g unsalted butter
-1¹/³ cups roughly chopped almonds
-2 tsp salt
-300g milk chocolate
METHOD:
1.Line a baking tray with baking paper or grease the baking tray and leave aside.
2.In a pot, add the sugar and butter and melt over low to medium heat stirring until it is well combined and the mixture starts to bubble.
3.Low boil the mixture, stirring occasionally for 8-10 minutes.
4.Remove the pot from the heat, then add the salt and 1 cup of the almonds and mix well.
5.Pour the mixture into your prepared baking tray, then even it using the back of a large steel spoon.
6.Leave the mixture to cool for 10 minutes. Now melt the chocolate in the microwave in 30-second bursts. I add a drop of oil into my melted chocolate for a shine.
7.Pour the melted chocolate over the almonds roca and then spread evenly using a spatula.
8.Sprinkle the remaining almonds & ENJOY!
Store in an airtight container
