Recipe of the week: Khowse

INGREDIENTS:
-1kg chicken fillets, cubed
-1 large onion, grated
-4 tblsp ghee/clarified butter
-1 tsp green masala
-2 tsp red ginger garlic masala
-2 tsp jeero powder
-2 small cinnamon sticks
-2 elachi pods/ cardomon pods
-Salt to taste
-1 tsp tumeric powder /Haldi
-2 tblsp tomato paste
-Half cup water
-1 tblsp lemon juice
-1 and half tins of coconut cream
-2 tins coconut milk
-half cup or more of dessicated coconut

Extras:
Boiled spaghetti
Fried onions, chopped coriander,
green chutney,
fried samoosa pur strips


METHOD:
1.In a large pot, add ghee, cinnamon sticks, elachi pods, and melt over medium high heat.
2.Add onions and saute.
3.Add the chicken cubes and all the spices then leave to cook until the chicken is done. Add water if necessary.
4.Add tomato paste and lemon juice and cook until fully absorbed.
5.Add the coconut cream, coconut milk, and dessicated coconut, then stir and leave to boil.
6.Assemble in individual soup bowls as follows:
Add boiled spaghetti, then a generous ladel or 2 of khowse.
Sprinkle some crushed samoosa pur over and a dollop of green chutney.
Add more crushed fried pur then sprinkle the top with fried onions, chopped coriander & red chilli powder.
