INGREDIENTS:
-5kg lamb, cut into pieces
-25 potatoes, peeled & cut into halves
-5 large onions, sliced
-2 cans of tomato puree
-4 table spoon ground ginger & garlic mix
-4 table spoon whole jeera
-3 table spoon sha jeera
-½ table spoon clove
-8 cinnamon sticks
-10 whole elachi pods
-3 table spoon crushed red chilies
For the masala mix:
-4 table spoon chili powder
-3 table spoon jeera pwder
-2 table spoon dhania powder
-½ table spoon haldi powder
-½ table spoon egg yellow powder
-2 grams saffron
1 litre plain yogurt
250 ml ghee
750ml oil
2 litres of water
Method :
1 .Add your 750 ml oil to a pot and add your sliced onions and fry till golden brown.
Strain your onions and set oil and onions aside for later.
2 . Wash your lamb and strain and add to the pot. Add your ginger & garlic and your fried onions.
3.Add your whole jeera , sha jeera , clove , elachi , cinnamon stick & crushed chilies.
4 . Add your powder masala
Jeera powder, dhania powder , chillie powder , haldi powder , egg yellow powder.
5 . Add your 1 litre youghurt , tomato puree and your 750ml oil from earlier, and 1lt water.
6 . Put your pot on the open fire …. if using a stove cook on high until lamb is soft. +- 45 min
7 . Once lamb is soft, add 1 lt water and your potatoes and cook until soft.
8 . Garnish with dhania and serve with naan.
