Topic: Iftaar treats with dates
Recipe of the week: Peanut butter & pistachio dates
INGREDIENTS:
-16 Medjool dates, slit in the center & pits removed
-¹/⁴ cup of pistachios, chopped
-¹/⁴ cup smooth peanut butter, melted in microwave oven for 30 seconds
-Half a slab of any milk chocolate of your choice, melted in the microwave oven
-Optional: dried rose petals or pomegranate rubies for sprinkling and for added colour
METHOD:
1.Add 1 tsp of the melted peanut butter into each date.
2.Next, drizzle the melted chocolate over the dates.
3.Sprinkle the chopped pistachios over the dates. Also sprinkle the dried rose petals or pomegranate rubies if using.
4.Leave the dates to dry then ENJOY!
Variation:
-Stuff dates with pistachio cream.
2 ingredient pistachio cream recipe
Ingredients:
-200g pistachios, deshelled
-200g white chocolate, melted
Method:
1.Add the pistachios into a food processor and blitz for about 20 min or until you get a smooth and thin paste.
2.Now add the melted white chocolate into the blender with the pistachio paste and whizz for another 5 min until the mixture is smooth and creamy.
3.Store in a jar in the fridge overnight, then melt the required amount when necessary.
