Recipe of the week:
Potato Chaat
INGREDIENTS:
For the potatoes:
-2 medium-sized potatoes, cut into cubes and boiled
-2 tblsp ghee/clarified butter
-1 medium-sized onion, finely chopped
-¹/² tsp mustard seeds
-¹/² tsp sesame seeds
-¹/² tsp cumin/jeera seeds
-1 tsp red ginger garlic masala
-¹/² tsp turmeric powder
-¹/² tsp cumin powder
-salt to taste
-1 tsp ground garlic
For the yoghurt mixture:
-4 tblsp Greek or natural yoghurt
-2 tsp ground garlic
-salt to taste
Other ingredients:
-20 cracker biscuits of your choice
-chaat masala for sprinkling
-green chutney
-Tamarind/Aamli chutney
-1 medium-sized tomato, cut into small cubes
-fried samoosa pur broken into pieces
-a handful of fresh coriander, chopped
METHOD:
To make the potatoes:
1.In a pot add the ghee and melt over medium heat.
2.Add the mustard seeds, jeera seeds and sesame seeds to the pot and when it starts to sizzle add the boiled potatoes.
3.Now add the remaining spices and mix well. Leave aside.
4.In a small bowl add the yoghurt, garlic and salt then mix together and leave aside.
5.Use a large plate or platter and spread the yoghurt mixture evenly across the base of the platter/plate.
6.Add the spiced potatoes over the yoghurt mixture.
7.Add dollops of green chutney and tamarind chutney over the potatoes.
8.Sprinkle chaat masala over then sprinkle the cubed tomatoes and chopped onions.
9.Add some crushed fried pur over the top then garnish with chopped coriander leaves.
10.Dust off with some more chaat masala.
11.Arrange the cracker biscuits around the platter/plate and serve immediately.
