My recipe for Pavlova
INGREDIENTS:
-4 large egg whites
-1 & quarter cup white sugar
-2 tsps Maizena powder
-1 tsp vanilla essence
-1 tsp lemon juice
-whipped cream, strawberries cut into halves, blackberries, raspberries, blueberries, and granidilla pulp for decorating
METHOD:
1.Preheat oven to 150° Celsius
2.Line a baking tray with parchment paper & draw a large circle on the parchment paper using a pencil.
3.Using an electric beater, beat the egg whites until stiff but not dry.
4.Add the sugar 1 tablespoonful at a time and beat well before
adding the next tablespoonful.
5.Beat until the mixture is thick, white & glossy.
6.Fold in the Maizena, then add the vanilla essence & lemon juice.
7.Spoon the mixture into the center of the circle drawn on the parchment paper, then spread the mixture evenly towards the end of the circle.
8.Bake in the preheated oven for 60 minutes or until a tester comes out clean.
9.Leave to cool on a wire rack and decorate only when completely cool.
10.Decorating suggestion:
Cover the top of the Pavlova with whipped cream, then drizzle granadilla pulp across the cream. Arrange strawberries cut in halves and other berries on the top. Drizzle more granadilla pulp over the berries, then refrigerate.
