Arabic Chicken Shish Kebab

Makes 10 skewers

INGREDIENTS:
-1kg chicken breasts cut into 1-inch cubes
-¹/² cup olive oil
-2 tblsp ground garlic
-2 tblsp freshly squeezed lemon juice
-2 tsp ground cumin
-2 tsp paprika
-1 tsp ground cinnamon
-Salt and black pepper to taste
-10 wooden skewers
-Additional olive oil for basting

METHOD:
1.In a dish, mix the chicken, olive oil, garlic, lemon juice, cumin, paprika, cinnamon, salt, and pepper. Then refrigerate for at least 30 minutes or overnight.
2.Thread the chicken pieces equally on the 10 wooden skewers
3.Set oven to grill then grease a baking tray and arrange the skewers on the tray.
4.Grill on each side for 6-7 minutes until the chicken is cooked and baste the skewers with olive oil before turning and grilling.
5.Serve on top of 4 large naan bread or garlic naan bread. Arrange lightly spiced masala fried chips on the side. Add a small bowl of cucumber, tomato, onion and mint salad on the platter. Add another small bowl of a dipping sauce of your choice. I used chilli sauce. Garnish with fresh lemon quarters.
