Recipe of the week:
STUFFED DATES
1.Cream cheese, pistachio, pomegranate & hot honey dates
INGREDIENTS:
-12 Medjool dates, soft & pitted
-8 tblsp smooth, plain cream cheese
-¹/⁴ cup chopped pistachios
-3 tblsp honey
-pomegranate rubies
METHOD:
1.Using a sharp knife, make a slit in each date and remove the pits.
2.Stuff each date with smooth cream cheese.
3.Sprinkle each date with pistachios and pomegranate rubies.
4.Warm the honey in a microwave oven then drizzle on each stuffed date.
2.Snickers stuffed dates
INGREDIENTS:
-12 medjool dates, slit and pitted
-4 tblsp smooth peanut butter
-¹/⁴ cup roasted, salted peanuts, finely chopped
-¹/² cup melted, brown chocolate
METHOD:
1.Stuff each date with a teaspoon of peanut butter.
2.Add some chopped nuts into each date.
3.Dip the dates into the melted chocolate.
4.Sprinkle the remaining nuts on each coated date.
3.Almond butter, pecan & raspberry stuffed dates
INGREDIENTS:
-12 medjool dates, slit and pitted
-6 tblsp creamy almond butter
-12 fresh raspberries
-12 pecan nut halves
METHOD:
1.Stuff each date with 1¹/² tsps of almond butter.
2.Press a fresh raspberry and 1 pecan half in the center of each date.
4.Peanut butter & banana bliss dates
INGREDIENTS:
-12 medjool dates, slit and pitted
-4 tblsp smooth peanut butter
-12 thin banana slices
-¹/⁴ cup plain brown chocolate, melted
METHOD:
1.Stuff each date with 1 tsp of peanut butter.
2.Now add 1 banana slice into each date.
3.Drizzle the melted chocolate over the dates.
