Recipe of the week: Tiramisu

INGREDIENTS:
-250ml strong black coffee (1 tblsp coffee granules of your choice boiled in water)
-half cup castor sugar
-2 tsp vanilla esscence
-250g mascarpone cheese
-half cup fresh cream
-2 boxes of Boudior biscuits/Finger biscuits
-cocoa powder for sprinkling

METHOD:
1.Leave the brewed coffee to cool.
2.Beat the cream & castor sugar until slightly stiff.
3.Fold in the vanilla essence & mascarpone cheese.
4.Pour the coffee into a shallow bowl & dip the finger biscuits into the coffee.
5.Arrange a single layer of the coffee dipped biscuits in a rectangular/square Pyrex dish.
6.Spread half of the cream mixture evenly over the biscuits, then repeat another layer of dipped biscuits topped with a smooth, even layer of the mascarpone cheese mixture.
7.Refridgerate overnight so flavors can blend.
8.Sprinkle cocoa powder on the top before serving & ENJOY!

You can also sprinkle grated chocolate of your choice over the cocoa.
