Recipe of the week: Tzatziki with carrot, cucumbers & pita
TZATZIKI RECIPE:
Ingredients:
-2 cups grated cucumber, drained
-1¹/² cups natural yoghurt
-2 tblsp extra virgin olive oil
-2 tblsp chopped mint & or dill
-1 tblsp freshly squeezed lemon juice
-1 medium clove of garlic, minced or finely chopped
-salt to taste
Method:
1.Add the drained grated cucumber into a mixing bowl, then add the remaining ingredients and salt to taste.
2.Stir and mix well, allowing the flavors to blend.
3.Leave the Tzatziki to rest for 5 minutes, then serve with carrot sticks, cucumber sticks or rounds, radish rounds, celery sticks, and pita slices.
This is a quick and healthy lunchbox treat for yourself & for your kids to enjoy!
