Recipe of the week: Pancake pasta/Pancake ribbons
INGREDIENTS:
-1¹/² cups flour
-4 tsps baking powder
-1 tsp salt
-1 tblsp sugar
-1¹/⁴ cup milk
-1 large egg
-4 tblsp melted butter
-Oil for frying
METHOD:
1.Beat sugar and butter.
2.Add the egg, salt & baking powder and continue beating.
3.Now add the milk and gradually add the flour then continue beating until you have a smooth batter.
4.Heat some oil in a non-stick frying pan over medium heat.
5.Pour some of the pancake butter into the pan to make a large, thin pancake.
6.Flip the Pancake over when bubbles form and cook until done.
7.Leave aside on a plate and cover while making more large, thin pancakes.
8.Roll up individual pancakes with your hand then using a sharp knife cut into thin strips.
9.When you open each strip it will resemble a pancake spaghetti or ribbon.
10.Arrange the pancake ribbons on a pretty plate one on top of the other.
11.Add your favourite toppings: I drizzled golden syrup & chocolate syrup over the pancake strips. I then added strawberry halves, slivered pistachios and a large dollop of vanilla ice cream in the centre. I drizzled some more of the chocolate syrup over and finally sprinkled cinnamon powder over before serving.
