Recipe: Chinese Chilli Garlic King Prawns

Serves 4

INGREDIENTS:
-1kg king prawns, peeled, deveined, tails on. Pat dry using paper towels

For the sauce:
-4 tblsp soy sauce
-2 tblsp oyster sauce
-2 tsp sugar
-4 tblsp water, room temperature
-2 pinches white pepper

Spices:
-12 garlic cloves minced
-2 thumbs of ginger, grated
-4 red chillies sliced, for added heat keep the seeds

Other ingredients:
-4 tblsp oil
-2 tsp sesame oil
-spring onions, chopped for garnish -squeeze of 2 limes
-sesame seeds for sprinkling

METHOD:
1.Start by making the sauce. Add all the ingredients for the sauce together into a cup then stir and leave aside.
2.Heat a wok or non stick frying pan over high heat then add 2 tblsp of oil and the prawns. Fry prawns for 1 minute on both sides until pink and the prawns form a “C” shape. Remove from the wok/pan and leave aside.
3.In the same wok/pan, add 2 tblsp of oil, garlic, ginger and chilli then fry for 30 seconds till fragrant. Don’t burn the garlic.
4.Pour the sauce into the wok/pan and let it bubble for 20 seconds.
5.Toss the prawns back into the wok and coat fast for 1 min.
6.Remove the prawns from heat then drizzle with sesame oil, lime juice and sprinkle the spring onions and sesame seeds over.
7.Serve the prawns immediately with boiled white rice or boiled noodles.
