MASALA EGGS 2 WAYS

Serves 4

INGREDIENTS:
-6 large eggs
-1 large onion, grated
-2 medium sized tomatoes, grated
-1 tsp salt or salt to taste
-1 tblsp red ginger garlic masala
-1 tsp turmeric powder
-1 tsp red chilli powder
-¹/⁴ cup coriander leaves, chopped
-extra coriander leaves for garnish

METHOD:
1.Saute onions in hot oil until golden in a non-stick frying pan.
2.Add the tomatoes into the pan and cook for 5 minutes. The tomatoes must not dry out.
3.In a dish add the eggs and the remaining ingredients and whisk until well combined.
4.Pour the egg mixture into the onion and tomato mixture and stir until the eggs are cooked and scrambled.
5.Garnish with chopped coriander leaves and serve hot with bread, roti or parathas.

Variation:
1.If you have leftover bhindi/okra curry, heat it in your frying pan then add to it the following:
-6 large eggs
-salt to taste
-red ginger garlic masala to taste
-¹/⁴ cup coriander leaves, chopped

2.Now mix everything together and keep stirring until the eggs are cooked and scrambled. 3.Garnish with chopped coriander leaves and serve hot!
