Mediterranean Baked Fish
INGREDIENTS:
-600g hake fillets
-1 small purple onion, cut into thin slices
-1 cup cherry tomatoes, cut into halves
-¹/² green or orange pepper, cut into chunks
-1 cup sliced mushrooms
-¹/² cup black olives, pits removed and cut into halves
-¹/⁴ cup green olives, pits removed and cut into halves
-1large lemon
-salt, black pepper, lemon pepper to taste
-2 tsps paprika
-3 tsps dried origanum
-3 tblsp extra virgin olive oil
-1 tblsp ground garlic
-fresh parsley for garnish
METHOD:
1.Pat the hake fillets dry using a paper towel and preheat oven to 200°C.
2.In a large plate, add 2 tsp black pepper, 2 tsp lemon pepper, 2 tsp paprika, 2 tsp dried origanum and mix together.
3.Rub the hake fillets on both sides in the spice mixture.
4.Drizzle olive oil in a large pyrex dish then arrange the hake fillets in the dish.
5.In a seperate bowl, add the onions, cherry tomatoes, mushrooms, peppers, olives, garlic and the juice of half a lemon.
6.Mix the veggies together then add the olive oil and seasoning to taste and mix well.
7.Cut the remaining half of the lemon into thin slices and place in between the hake fillets.
8.Add the spiced veggies around the hake fillets then add evenly over the fish.
9.Place the fish in the oven to bake for 25-30 minutes or until the fish is flaky.
10.Garnish with fresh chopped parsely and serve with savory rice or rustic chips.
