Lamb Biryani

INGREDIENTS:
-1 kg lamb, washed, trimmed and cut into equal sized pieces. Drain well

Marinade:
-2 tblsp ginger garlic paste
-2 tblsp chilli garlic paste
-1 tblsp whole cumin/jeeraa seeds
-2 tblsp lemon juice or white vinegar
-2 tsp rough salt, add more if needed
-1 heaped tsp of dhana jeeraa powder
-3 tsp crushed red chillies
-1 heaped tsp chilli powder
-1 heaped tsp tumeric
-2 tblsp tomato paste
-2 cinnamon sticks
-2 cloves
-3 elachie pods
-1 Staranise

-2 cups of crushed fried onions
-1¹/² cups tomato grated or 1 cup boiled & pureed tomato
-1¹/² maas or yoghurt
-Half tsp of saffron..roasted and steeped in boiling water
-A handful of mint leaves
-6 to 8 whole green chillies

Add all this to the meat and allow to marinate.
Adjust salt and chillies if u want

2¹/² cups parboiled rice
1¹/² cups boiled masoor. Add salt and half tsp tumeric when boiling masoor
3 potatoes, cut into halves & fried on low heat.


Option 1
In a flat heavy pot add half cup mixed ghee and oil..sprinkle little rice and masoor first
Add in the marinated meat..but reserve some masala in the dish
The meat must not be a single layer..it must be compact
To the reserved masala mixture add the masoor and mix well
Add the masoor over the meat
Now add the potatoes and gently push into the masoor till its barely visible

Add some saffron and yellow colour water to the rice
Add over the masoor mixture
Add quarter cup ghee over
Add fried onions if u like
Now add 2 cups of water for steaming
Preferably boiling water
Cover with foil well

Steam on Stove top for 45 min to 1 hour on medium to low heat
Pre heat the oven to 180 to 200 degrees
Place the pot in the oven for another 45 min
Switch off ..and serve

Option2
Add the ghee and oil to the pot
And heat up
Add in the marinated meat and cook till halfway done
Add about 2 cups boiling water when cooking
Now add the Fried potatoes
Masoor and rice and steam further this cooked through

Boil 4 eggs and cut in halves
Chopped greens are optional
Served with sour milk dhai
Papads.

To serve biryani ideally
First dish up the rice on one side of the platter
Then the masala from the bottom on the other
Place boiled eggs on top before serving and enjoy with dhai & papar.
