HAJI ALI SANDWICH

Haji Ali Sandwich is a popular Indian street food.

INGREDIENTS:
For the pototo filling:
-5 medium sized potatoes
-1tblsp butter/ghee
-1¹/² tsp cumin seeds/jeera
-1tsp mustard seeds
-1½ tsp crushed garlic
-1¹/² tsp green masala
-½tsp tumeric powder
-1½ tblsp lemon juice
-Few curry leaves
-Salt to taste
-8 slices of white bread
-Butter/ghee softened for spreading and frying
-Additional crushed garlic
-2 cups mozzarella and cheddar cheese, grated and mixed together
-1large purple onion, finely chopped
-Green chutney for spreading
-Amli chutney -Chaat masala -chopped coriander leaves
-Optional: chopped red & green peppers

METHOD:
1.Peel the potatoes then cut into cubes and boil, drain then mash. Leave aside
2.Heat 1tblspn butter/ghee into a pan, then add the mustard seeds, jeera seeds and curry leaves and remove from heat when it starts to sizzle then add it to the mashed potatoes.
3.Now add the green masala, crushed garlic, tumeric powder, salt to taste and lemon juice into the mashed potatoes and mix well.
4.Now add the chopped onions & some chopped coriander into the potato mixture and mix well.
5.To assemble the sandwich: Add some crushed garlic into the softened butter/ghee and mix well.
6.Spread the garlic butter on 4 slices of bread then turn the 4 slices over and spread a generous layer of green chutney on the other side.
7.Now add a generous layer of the potato mixture on top of the green chutney then add the grated cheese. Add the chopped peppers if using.
8.Drizzle with amli chutney & sprinkle chaat masala.
9.Close the sandwiches with the remaining slices of bread, then butter the top slices with the remaining garlic butter. 10.Toast the sandwiches in a sandwich maker or hot pan until golden on both sides.
11.Cut into halves, quarters or triangles & serve immediately.
