Recipe of the week:
Coconut Ice
INGREDIENTS:
-2 cups icing sugar
-3¹/² cups dessicated coconut
-400ml condensed milk
-3 drops red food coloring
METHOD:
1.In a large mixing bowl, add the icing sugar, dessicated coconut, and condensed milk altogether and mix first with a large spoon, then with your hands.
2.Divide the mixture into half using a separate bowl.
3.For the white layer: Transfer the white layer from the bowl into a square tin lined with wax paper.
4.Use your hands or a spatula to form an evenly spread layer.
5.For the pink layer: Add the red food coloring into the remaining mixture and use a spoon or your hands to combine the colour into the coconut mixture evenly.
6.Layer the pink mixture in portions over the white layer using a spatula to create an even layer.
7.Place the coconut ice into the fridge for 2 hours until set.
8.Remove from the fridge and using a sharp knife, cut into 1 inch squares.

-Store in an airtight container.
-Arrange in glass jars, tie a ribbon around the jar & give away as a special sweet treat to your loved ones.
