GARLIC BUTTER STEAK

Serves 2

INGREDIENTS:
-2 pieces of 300g boneless steak cut 2.5cm thickness. You can use ribeye, scotch fillet or tenderloin medallions
-1 tblsp vegetable oil
-salt and black pepper to taste
-75g unsalted butter cut into cubes
-3 sprigs of fresh rosemary of 6 sprigs of fresh thyme
-5 cloves of garlic, peeled and smashed to split

METHOD:
1.Take the steaks out of the fridge 30 minutes prior to bring it to room temperature.
2.Pat the steaks dry using paper towels.
3.Use a heavy based skillet and add the oil into the skillet over high heat until it’s very hot.
4.Season the steak pieces generously on each side with salt & black pepper then place into the hot skillet.
5.Sear the top side for 2-2¹/² minutes until you get a crust then turn over and sear the other side.
6.Push the steaks to one side of the skillet then add the butter, smashed garlic and thyme or rosemary into the pan. Thyme will sputter so be cautious.
7.As soon as the butter melts, tilt the skillet and continously spoon the garlic butter over the steaks until it is cooked according to your preference. Cook both sides for 3-4 minutes for medium.
8.When the steak is done, place it on a plate a cover loosely with a foil to rest for 5-10 minutes.
9.Serve the steaks with the remaining garlic butter from the pan drizzled on top and Enjoy!
10.Serve with side dishes of your choice
