Recipe of the week: Puff pastry pizza
Serves 4
INGREDIENTS:
-320g ready rolled puff pastry
-6 tblsp tomato puree
-1 tblsp All Gold tomato sauce
-1tsp oregano
-salt and black pepper to taste
-100g grated cheddar or mozzarella cheese or 50g of both cheeses
For the toppings:
-cherry tomatoes cut in halves
-black olives cut into halves
-red & yellow peppers cut into strips
-mushrooms, sliced
-feta chunks
METHOD:
1.Preheat oven to 180°C
2.Roll out the puff pastry then using a sharp knife cut into 8 squares.
3.Make a border on each piece, 1cm away from the ends.
4.Place onto 2 greased baking trays then pop into the oven for 15 min or until puffed & lightly golden.
5.While the pastry is baking, make mix together the tomato puree, tomato sauce and oregano to use as a base. Season to taste.
6.Remove the pastry from the oven and leave to cool slightly.
7.Spread the tomato based on each puffed pastry slice then arrange the toppings equally on all the bases.
8.Sprinkle cheese and place back into the oven for a few minutes until the cheese melts.
9.Serve hot & enjoy!
