Recipe of the week:
Custard Slice
INGREDIENTS:
-125g butter, softened
-¹/² cup sugar
-2 large eggs
-¹/⁴ cup milk
-1 tsp vanilla essence
-2 tsp baking powder
-pinch of salt
-3 cups flour
INGREDIENTS for the custard:
-4 cups milk
-³/⁴ cup sugar
-¹/² cup custard powder mixed with ¹/² cup milk
-pink & green food colouring
METHOD:
1.Preheat oven to 170°C.
2.Cream the butter and sugar.
3.Now add the eggs, vanilla essence, baking powder and salt then mix together.
4.Add the milk and continue beating.
5.Gradually add the flour and knead to form a dough.
6.Divide the dough into 7 balls then roll out on a floured surface into rounds with a diameter of approximately 20cm.
7.Grease baking trays then bake the rolled out dough one at a time for just 5 minutes.
8.When cool, layer with custard alternating the pink and green colours. Sprinkle some crumbs of the baked dough on the top layer.
9.Refridgerate for a few hours and serve cold.

METHOD for custard
1.Add the milk in a pot and bring to a boil.
2.Add sugar to the custard powder & milk mixture then stir until dissolved.
3.Add the custard mixture into the boiled milk and stir until the custard thickens slightly.
4.Divide the custard between two bowls then add a few drops of pink colour to the one bowl and drops of green food colour to the second bowl.
5.Mix the two bowls of custard then spread a generous layer on the baked biscuit slices alternating the colours. Spread the custard while it is still warm.
