Recipe of the week: Easy stir fried veggies with soy & garlic sauce
Serves 4
INGREDIENTS:
-1 large carrot, cut into strips or julienned
-1 large purple onion, chopped
-1 large red bell pepper, cut into strips or julienned
-1 large yellow pepper, julienned
-2 cups purple and white cabbage leaves, cut into strips
-1 cup of broccoli florets, seperated
-1 cup of cauliflower florets, seperated
-1 cup of sliced mushrooms
-1 cup of baby corn
-handful of chopped coriander leaves
-1 tblsp sesame seeds
-¹/² cup peanuts or cashew nuts
-1¹/² tblsp crushed garlic
-1 tsp ground green masala
-3 tblsp cooking oil
-1 cup of boiled spaghetti
-Salt, black pepper & lemon pepper to taste
METHOD;
1.In a wok or large frying pan, heat the oil over medium heat.
2.Now add the onions, garlic & green chili then braise.
3.Add the remaining vegetables except the coriander, and toss until cooked.
4.Add the boiled spaghetti and seasoning then mix well.
5.Now add the nuts sesame seeds and coriander leaves.
6.Add more seasoning if necessary.
7.Enjoy as is or add a sauce for enhanced flavour.
Easy sauce to add to your stir fried veggies:
Soy & ginger sauce
INGREDIENTS:
-¹/² cup low salt soy sauce
-2 tblsp sesame oil
-2 tblsp honey or brown sugar
-1 tblsp rice vinegar
-1 tsp crushed garlic
-2 tsp fresh ginger, grated
-1 tblsp cornstarch (Maizena)
-¹/⁴ cup vegetable broth
METHOD:
1.Add all the ingredients together into a small dish and whisk together until the cornstarch is dissolved.
2.Add this sauce into your stir fry in the last few minutes of cooking then stir until the sauce thickens.
