Recipe of the week: Shakshuka

INGREDIENTS:
-3 tblsp extra virgin olive oil
-1 large onion, diced
-1 large red bell pepper, seeded and diced
-2 large tomatoes, grated
-1 tblsp crushed garlic
-3 tsps paprika
-1 tsp cumin powder
-1 tsp chili powder
-6 large eggs
-salt & black pepper to taste
-1 small bunch of chopped coriander

METHOD:
1.Heat the olive oil in a large non-stick frying pan over medium heat, then add the onions and saute until translucent.
2.Now add the red peppers and leave to braise.
3.Add the spices and mix well.
4.Add the tomatoes, lower heat and leave to cook until well absorbed.
5.Now use a large spoon and make 6 wells in the mixture.
6.Drop one cracked egg into each well then cover the pan and leave the eggs to poach for 3-5 minutes.
7.Add more seasoning if necessary.
8.Sprinkle with chopped coriander leaves and serve immediately with pitas or crusty bread.
