CHANA MAGAJ
Ingredients
1cup gram flour
1tbsp ghee
1tbsp milk
³/⁴ cup ghee/ butter
1 cup icing sugar
1½ cups klim/milk powder
2 tsp cardamom powder
¹/⁴ tsp nutmeg powder
2 tsp ground almond powder, optional
Method:
1.Sift the gram flour into a bowl,add the ghee/butter and milk form into breadcrumbs.
2.Allow to stand for 2 hours.
3.Sift the mixture through a wide-holed sieve, set aside rough bits.
4.Heat the ghee/butter in a pot and braise the rough bits of gram flour on low heat until golden for about 30 minutes, stirring continuously (do not break the lumps).
5.Add the finely sifted gram flour and continue braising for 10 minutes, stirring continuously (use low heat to prevent it from burning).
6.Transfer mixture into a bowl and allow to cool completely.Thereafter mix well.
7.Add the remaining ingredients to the mixture and beat vigorously.
8.Press onto a 22cm ×22cm glass casserole, lined with cling wrap.
9.Decorate with roughly chopped almonds.
10.Refrigerate for a few hours until set, thereafter cut with a cookie cutter or cut into diamond shapes.
