Comfort Food: Cottage Pie

INGREDIENTS:
For the mince
-1 kg chicken or beef mince
-1 large onion, chopped
-2 medium tomatoes, grated
-4 tblsp butter or ghee
-1 tblsp red ginger garlic masala
-2 tsp ground garlic
-1 tsp ginger garlic
-1 tsp turmeric powder
-2 tsp salt

For the mashed potatoes:
-5 large potatoes, peeled and cut into chunks
-¹/² cup warm milk
-3 tblsp soft butter
-1 tblsp crushed garlic
-1 or 2 tsps ground green masala
-salt & black pepper to taste

Grated gouda or cheddar cheese to add on top

METHOD:
1.For the mince: Add the butter/ghee into a pot and melt over medium heat.
2.Now add the onions and saute.
3.Add the washed mince into the pot and stir to avoid lumps.
4.When the mince is cooked, add all the spices and the tomatoes then lower heat and leave to cook until the tomatoes are cooked. Leave aside when done.
5.For the mash:
Add water into a deep pot and bring to a boil then add the potatoes and 1 tsp salt.
6.Once the potatoes are soft, remove from heat and drain, then place back into the same pot and mash until smooth.
7.Add the butter, milk, salt and pepper then mix well until the mash is creamy.
8.Now add the garlic and green masala to taste and mix until well combined.
9.To arrange:
Use a large pyrex dish. Arrange the mince evenly at the bottom of the pyrex dish.
10.Now add an even, thick layer of the mashed potatoes over the mince.
11.Cover the top of the mashed potatoes with grated cheese then place into a preheated oven, 180°C and leave until the cheese melts.

Variation:
-Add mixed vegetables or just cubed carrots and peas into the mince.
-Add a tin of spaghetti in tomato sauce over the cooked mince when layering then add the mashed potatoes.
-The mashed potatoes can be piped on top of the mince.
