Cooking With Bibi Aysha
Recipe: Sweetcorn Lagan
INGREDIENTS:
-1 tin(415g) creamstyle sweetcorn
-4 large eggs
-90ml milk
-60ml oil
-40ml dessert cream
-¹/² cup chana flour(besan)
-¹/⁴ cup white flour
-2¹/² tsp baking powder
-2 tsp green masala
-1 tsp salt
-1 tsp crushed garlic
-¹/⁴ tsp turmeric powder
-¹/² tsp black pepper
-2 tblsp chopped coriander leaves
-2 tblsp chopped spring onions
-sesame seeds for the top.
METHOD:
1.Preheat oven to 180°C.
2.In a dish add the eggs, milk and oil then beat together.
3.Now add the cream and continue beating.
4.Add the sweetcorn, coriander leaves, spring onions, spices and baking powder into the dish and mix well.
5.Now add the chana flour and white flour and beat together.
6.Grease a pyrex dish then pour the sweetcorn mixture evenly into the dish.
7.Sprinkle sesame seeds over the lagan then place into the oven.
7.Bake for 35 min or until a cake tester comes out clean.
8.Leave to cool for 10 minutes then cut into even squares and serve with your favourite chutney.
