Recipe of the week:
Mexican Street Corn (Elote)
INGREDIENTS:
-4 corn cobs, husks removed -¹/⁴ cup Mayonnaise or salad cream
-¹/⁴ cup sour cream
-¹/² cup crumbled feta cheese
-1 tsp chili powder or paprika. Can add more if you want more heat
-1 medium-sized lime or lemon, cut into wedges
-2 tbsp chopped coriander leaves
-Salt to taste
METHOD:
1.Grill the mielies over medium-high heat in a heated pan, turning till charred all around for 8-10 minutes. Boil if you don’t grill but grill tastes much better.
2.Mix the Mayonnaise and sour cream then brush over the hot mielies.
3.Sprinkle the cheese, chilli powder, salt and chopped coriander leaves.
4.Serve with lime/lemon wedges to squeeze.

Variation:
For the cup version of this recipe known as Esquites do the following:
1.Slice the corn kernels off the cob then char or boil.
2.Mix the corn with the remaining ingredients and serve in a cup.
